Only 75 frame MAX order in the past two years was for GECAS on 28 December 2016. SpiceJet took 100 two days later.
Large 2017 MAX orders for 2017 include CALC (China) for 50 in June and a UFO for 50 in September. There were a total of 84 ordered in three separate transactions (13 / 30 / 41) over the last week of March, but all the other recent UFOs have been smaller.

The 125 737MAX8 announced at PAS was a commitment not an order, hence why there is nothing on Boeing Books. Boeing also said the commitment was for an unidentified major airline customer, I wouldn't put Jet Airways into that category.

It should not, for Boeing currently does not break out MAX sales by model. So a MAX model swap would still show as a generic "MAX" in the order report and therefore there would not be a need (as of yet) to reflect that via a cancellation and rebooking.
Boeing does acknowledge model changes within a family via a cancellation and rebooking, which is why a 737NG to 737MAX (or vice-versa) order is reflected in this form. And once Boeing starts to record MAX (and 777X) orders by specific model (737-8, 737-10, 777-9, etc.) we should start seeing model changes reflected via this format.
China's largest airline by passenger numbers has agreed to buy 8 B777-300ER wide body jets and 30 B737-8 narrow bodies, the Chinese firm said in a stock exchange filing.
The planes will be delivered between 2019 and 2020 and will be funded through China Southern's own funds and loans from commercial banks, the company said.

You have to go back to 2014 for the next 30 frame UFOs (15 May and 14 November). That being said, 2014 had a number of large MAX UFO orders, so China is probably behind most of them so these 30 could be one of those old UFO (either one of the 30s or part of the larger orders).
