There 757-200's are to be around for another 5-6 years however they are consistently expanding season upon season. There new bases at STN & BHX seem to be performing very well so would imagine they need more aircraft to warrant further expansion into them.

I think a Jet2 order of some sort is very likely in the next 12-18months, but I don't know if the Dubai Air Show is the most likely for it (but I could be completely wrong)

In the end, a contract is just a piece of paper and if the airlines chooses to not honor it, there is not much Airbus nor Boeing can do about it. In such a situation, Airbus/Boeing is legally allowed to keep the monies already paid as compensation for the rejection, however if they want the remaining amount owed, they will have to litigate in a civil court.
For large customers, that's generally not a strategy either OEM wishes to engage in as it could result in them being (effectively) black-listed for future orders. And for popular models (A320, A330, A350, 737, 777, 787) there are existing customers ready to take frames earlier so the OEM can re-assign the rejected / deferred frame.
