Thats the point everyone keeps missing! They dont have any spare aircraft, so to upgrade EDI means a downgrade or cancellation somewhere else. Also, the 757s are still reasonably good aircraft, and are not quite ready for retirement yet. To remove it from EDI, they need to re-assign it somewhere else. It's not all about what EDI needs.
I believe the current plan is to use the 737 MAX10 across the Atlantic once the 757s are retired, so you're probably more likely to see these at EDI rather than a 777.
It's still operating. Tuesdays and Saturdays, EDI-DUB only (no return, as it operates PEK-EDI-DUB-PEK).
The return flight, PEK-DUB-EDI-PEK operates on Thursdays and Sundays.
