By your own logic it would be false to assume UA SFO-ZRH is coming back in 2020 as it has not been announced yet and shows no operations in winter season correct? United never announced they were canceling AMS-SFO. Everyone is going off of what was removed which was 03NOV19 – 31DEC19.
I'm not assuming anything at all. My attitude is that the service may or may not return, but we have no information at present which would indicate "suspends SFO-AMS for winter" is any more accurate than just "suspends SFO-AMS." The flight was removed from OAG and it's also unavailable for booking through United from the date on which it is suspended until the end of the booking window. Airlines don't always announce that they're canceling flights -- sometimes a flight or route is simply removed quietly from the reservations systems and that's it. A press release about cancelled service isn't exactly good P.R. for the airline.
If SFO-ZRH was announced as seasonal and/or had run seasonally in the past, it would be more reasonable to assume that a suspension would indeed be just for the winter. We have no history for SFO-AMS and the airline has made no announcement about the route being converted to seasonal service or simply suspended due to aircraft availability or some other factor. We know it will be suspended this winter. We don't know if that's just for the winter or indefinitely.

Routes Online says the service is going summer seasonal
Routes Online only says that because it ended up being summer season only for 2019. They have no further data which indicates the route will operate in summer 2020.
