They last underwent D checks in 2012/3 AFAIK, I think this 767 might just be a hot spare or used if any of the flights particularly oversold. It's worth noting OpenSkies did have a fourth 757 aircraft (F-GPEJ) until 2011 when BA sold it to Privatair.
