As you all probably know, the tiny British cigartube with four hairdryers, is soon to join the list of extinct airliners.
Thus, I would love to get the chance to log a few of these jumboliners before it's too late, I know that City Jet operates regular flights from AMS to LCY (RJ 85) and I even had the pleasure of flying that particular route in 2012. But apart from that, where else does the Avro fly regularly in Europe?

What makes you think they are going extinct? Theres loads of them around.
In Europe you have Swiss, Brussels Airlines, CityJet, Malmo Aviation with sizeable fleets and others with 1 or 2 aircraft. Some are extensively used as charter and special mission aircraft too, which has seen increased use of the type in certain, particularly far flung regions.

You can fly RJ-85 from Cityjet on LCY-AMS, LCY-RTM, LX also flies it on some ZRH-AMS flights, as well you might get a BAe 146 by Jotta Aviation operating for BA on LCY-RTM and other routes.
Furthermore plenty around elsewhere as mentioned. You find them everywhere around the world
