Thought of a couple more since this was posted:
The vastness of the Sahara Desert - seen from a BA747-400 between LOS and LHR - punctuated here and there by tracks or rocky outcrops and the pattern of the sand dunes clearly visible.
The Australian Outback from a QF 747-SP, between PER and SYD, revealing an out of this world vista of red with white swirls.
Scores of wild animals seen from a UM VCV on approach to KAB Airport on a flight from VFA. A group of American tourists had to be yelled at to sit down by flight attendants as they excitedly got up to take photographs!

Funniest one was a few years ago. LHR-DXB-SYD on a QF A380, just opened the window after the night flight from LHR about an hour or so out of DXB and as my eyes adjusted to the bright sunsight I did a double take, a few thousand feet below flying parallel to us was an EK B777 also heading to DXB.

Many overs...
Flying into LHR (home airport) over London, you realise just how big London is and with all the landmarks visual.
First time I flew over the Polar route LHR-SFO (on N729PA)
Flying down the East Coast of Australia from Townsville or Cairns and seeing the Great Barrier Reef
Uluru or Ayers Rock in the Red Centre of Australia.
BNE-LRE on a Qantaslink Q400 and seeing the colours of the landscape and the remoteness of the Outback.
A delayed SYD-DXB-LHR flight (VH-OQA) meant we flew over Iran in the morning daylight rather than at night. Seeing the mountains and City of Shiraz below (have a keen interest in Iran's history and country).
Flying over Europe and trying to spot certain places, like LHR-WAW and over flying Berlin.
Looking for and trying to identify airports when over flying them too.
Any geographic features, flying in MAD from LHR is an example, mountains, high plains (from a high plane), gorges etc.

That is NOT a crappy picture. The soft tones of the fog and the quality of the picture work. AWESOME shot.

(My Brother In-Law is a photographer and uses that technique)

•C-47 departing Heathrow (not technically onboard a plane)
•West Coast of Ireland (VIE-IAD)

•Mount Fuji (HKG-NRT and HND-HKG)
•Avior 737-200 (PTY-BOS)
•Mount Washington and the Maine Coast with sea ice (EWR?-PWM)

My two favorites are seeing Hoover Dam on approach to LAS and Chicago on approach from the East to MDW or ORD.
