Was flying from Bogota to Frankfurt 2 years ago, and flying with Copa Embraer 190 plus Lufthansa 343 was much cheaper than 346 direct. but I wanted to try Copa. and thought that there would be another chance of boarding a 346. how wrong I was...

flew 763 seven times (Air New Zealand /3/, LAN /3/, Avianca /1/), but never got a chance of a 762.
the closest I was is probably when I was flying CCS-BOG-UIO in 2009 with Avianca. At that time, you could get probably nine different models on Avianca from CCS. So I was secretly hoping of a 762. But when 763 came, I was very glad to escape Venezuela as a tourist...

Others have mentioned the Boeing Stratocruiser and Lockheed Constellation, and I, too, wish I had flown them because of their intriguing designs. But being old enough to have flown a lot of piston engine airliners, I have to admit that a long flight on them is very fatiguing. I can tell you that 7 hours on a DC-6B was no treat. I read of TWA’s L-1649 Constellation flights from SFO to London taking 22 hours and shudder, especially at the thought of the noise and vibration. I heard a lot of Stratocruiser engines from the ground and they were very loud and low pitched. But that lower level lounge sure was nifty.
One prop airliner that I am glad I missed was the Canadair Northstar, a version of the DC 4 with Rolls-Royce Merlin engines instead of radials, where the cabin noise was above 90 decibels, enough to impair hearing. I wonder how many Trans Canada employees suffered hearing loss working on them, not to mention RCAF personnel who also worked on them?

One thing in its favor: it was certainly a good looking airplane.
I'll take this opportunity to say I'd like to have flown in a A340 of any sort, but especially a 500 or 600.

MORE 727s. There is no better answer than that coming out of my mouth. I have flown on those but not enough. I wish I had flown on more of those, a lot more than I actually did. That's why I insist on the word "more". Imagine this: you are so hungry that you feel you could eat two pounds of meat yourself in one single meal, a huge thick T-Bone steak for yourself, and all you are allowed to get is one ounce of meat, and a few veggies, no bread, that's it. I felt the same when back in the late 80s and 90s, I was deprived of flying on 727s. I always got to fly on MD-80s, A300s a couple of times, Fokker 100s, 737s and 757s, but no 727s. Yes 727s also, but much fewer than I would have liked. I was starved to death for 727s, the same way a poor child in Ethiopia is starving to death. Have I flown on 727s? NOT ENOUGH. Back in 2002, I flew MIA-TPA-MIA in one evening just to be on the final flight of the 727 at American. This was my last flight on a 727, ever. I could tell a lot more stories but I won't because if I do my post will be too long.
You must be wondering then why my username is American 767, it's because I have flown on a lot of those with American TATL during the 90s and 2000s.

I've also flown plenty of 727s over the years and definitely miss the type. The one airliner I regret not flying on would have been my last 727 ever, DL N8890Z, in 2002. I was actually sitting on the plane in CVG, in first class no less. However, storms in DFW were causing massive delays and I was getting increasing anxious about my connection to DEN. As the minutes ticked by and turned into hours I finally bailed and headed back up into the terminal to see if the gate agent could rebook me on the nonstop to DEN. They were able to do so and I ended up in the back of a packed MD-88, at the time glad to be getting out and wondering what would happen to my checked bag.
However, I now wish I'd stuck it out on N8890Z, even if it had meant overnighting in DFW, just to have had that final 727 flight. Per the BTS data the original connection was completely blown but there was an evening flight from DFW to DEN that maybe I would have had a chance to sneak on. My luggage did as it showed up at the house early the next morning.

Concorde. ..I wouldn't mind trying that one day (£99 Bay of Biscay flights ).. lesson ...don't put things off! One day they cease to happen and it's too late.

It kills me that I never got to experience the L-1011 or MD-11. I was not even drinking age when DL and AA retired them, respectively.
To make matters worse, there was virtually no domestic service from my hometown airport of ORD…

Honestly Airfast seems like a good option, they seem like a reliable operator! The caveat though is that they are a charter airline and legally can't sell tickets directly; wishing for an enthusiasts' charter one of these day!

Definitely flew on a bunch of United 762s. I actually never flew on one of the ex-CO ERs. Flew on the AA 762ERs that were doing the transcons before the A321s - super comfortable even in coach. Also flew on the 762s from both prior to the era where they were kept specifically on the LAX/SFO-JFK transcons.
And about eleventy billion 757s from both.
