This is sorta besides the point, but try one of these long flights on a BBJ . . .
Airlines can (and a few are) providing any amount of comfort on a 737. Including business class seats. AFAIK only AA 321T have true first class lie flat seats, but that configuration would fit just fine in a 737 also.
Its the sardine can packaging that's the problem.

What's the alternative to a 737 or A-320 these days? Up and down North to South America, not much else? East/West coast USA? Cross pond?

Have you flown a MAX? Definitely not loud in any way, some of the quietest aircraft I've ever flown.
Uncomfortable is of course a different question.
