So this is probably a really obvious question but I’ve been flying on the A320 family a lot recently and noticed a hissing noise during the initial climb. I’ve been told it’s just the pressurisation, but was wondering if anyone could shed some more light on what it actually is and why it makes that noise?

Often it is just a small stone between the rubber seal and the fuselage.

As seals get older, they become a little stiffer, less pliable. The seal takes a little bit more pressure to seat against the seal depressor or frame. The hiss you're hearing is the air escaping between the seal and the frame. It should go away rather quickly as the pressure differential goes up.
For a little aside, back in the day of "smoking on aircraft" we used to hunt for pressurization leaks along seals by looking for the nicotine buildup that formed around the flaw in the seal.

Those A320 family doors often “bang” or “knock” as you climb and pressure changes.

Cockpit windows too. It’s quite annoying when the seal just doesn’t quite seal. right before it does the squeal changes to a very high pitch/squeak and then it seals and the relative silence is bliss.

It makes mx mad because I don't think its good for the seals, but we used to dump a cup of water on the whiny or squealing door seals. The water would freeze and seal it, stopping the noise.

I’ve heard it a couple times at the overwing exits on a 320. It tends to go away around 7000 feet or so.
