I think that the major obstacle would be the physical differences between the two different cockpit layouts, if any, in regards to switches and their functions and location between the two types. Being that both types most likely have the same glass cockpit,the software differences would be pretty easy to write and update to include the MAX for an NG simulator. If say the MCP for the auto pilot is different in function, markings or switch layout, then that could be problematic.
