Etops For Airlines With Multiple Airplanes
If an airline has multiple aircraft types, when they go through the ETOPS approval process, do they have to do it for each aircraft type or is it a blanket approval for all their planes?

It is type specific and even individual AC specific. After approval each AC has to be maintained as ETOPS.
For ex. Delta has ETOPS 767-300ERs and domestic 767-300ERs. Same planes but the domestic birds are not maintained to ETOPS standards. The domestic planes can be certified to ETOPS if needed and the ETOPS can fall out of certification and used as domestic birds.

Dl757md is spot-on. Some times it doesn't make economic sense to have all aircraft ETOPS rated, as to bring the aircraft specifications up to and maintained at this level is expensive.
Another example of mixed fleets of ETOPS and non-ETOPS is in Australia, where some long, thin domestic services require ETOPS rating. If you have a fleet of say 24 B737's, you may only need to have a subfleet of 8-10 aircraft with ETOPS rating to perform the flights in question.
