The military has, at various times used "blindfold cockpit checks" as part of the syllabus. Really good for single-pilot stuff. If your hand can go straight to the item you don't use up any neurons thinking about where it is.

During the course, read the notes and listen to the instructor.
Later, go back to the hotel/home and eat/drink/go to sleep ready for the next day.
If you cannot understand what you were told during the day, bring it up first thing next day. YOU WILL NOT LEARN IT OUTSIDE OF THE CLASSROOM

I have never taken my notes from the classroom. Really, not once in 30years...... After the course, they go straight in the bin.
