The cards usually state explicitly something along the lines of "Do not remove card from aircraft." In addition, it us usually a federal crime to tamper with safety equipment, which may or may not include removal of the safety card. That being said, I'm sure collectors do this all the time and airlines usually have replacements at hand. A safer option is probably to ask the cabin crew for an extra if you're comfortable doing so.

I've seen people who do, but I never do myself.

Removing the card from the aircraft is almost universally illegal, as it's tampering with the safety equipment.
It is also theft.
People can and HAVE been prosecuted on one or both counts after relieving an airline of them.

If you must have one, politely ask the flight crew if they have a spare on board that you could have.
