At first poster - 2 crew flying at any one time, but more necessary on flights over 8 hours (3 or 4 crew) to allow adequate rest during the flight.

There has to be a full relief crew if the flight is longer than a certain amount of hours. No amount of technology can remove pilot fatigue. The reason they are all there is because during takeoff and landing, everyone will be up front for extra sets of eyes.
