That website is a little difficult to figure out, but they cram a ton of data into a very small space, so once you figure it out, there's quite a bit to it.

Is this due to that being Boeing house colors/style and the need for Evo to go on AB?
Otherwise I much prefer the aesthetic of the stripe/ribbon starting on the nose cone rather than below it.

The ribbon was pushed down compared to the previous MAX/787 livery- it now reaches no higher than the wing root while before it went up to the window line. Since the general shape was kept the same pushing it down means it starts lower on the nose and goes further back (reaches around just in front of tail cone, while before it was just behind rudder). This was done to make room for the larger titles on the fuselage, and so the nose cones would all be solid white which makes things nicer when they have to be replaced (don’t have to worry about slight misalignment of stripes on things painted at different times and different places).
I’ll also point out that in the old livery the ribbon only went through the nose cone on the 787. For the Max they purposely increased the downward angle at the front of the ribbon so that it avoided the nose cone entirely.

Is there a detailed breakdown of liveries and respective variants? Doesn't "EvoBlue" have some differences as well...perhaps in tail color?

No, there's only one EvoBlue livery. The posters are discussing the differences between the EvoBlue livery and the gold swoop livery found on some early delivery MAX 9s and 787s, referred to as "Wave" on the fleet site.
Aside from specials, United liveries can be grouped into the following categories:
The post-merger United/Continental hybrid livery with the gold globe and straight cheatline
The gold swoop/wave livery found on some early delivery MAX 9s and 787s
The EvoBlue livery now being rolled out to all aircraft
